This morning consisted of waking up and running my butt to church without breakfast.
When I came home, I decided to make lemon poppy seed pancakes from scratch and they were totally worth the empty stomach.
Recipe here. I substituted the flour with oat flour, buttermilk with milk & lemon juice (it’s a make your own buttermilk substitute when you don’t have buttermilk), butter with smart balance “butter”, and the sugar with brown sugar.
Topped these babies with fresh strawberries and orange honey from Florida.
