Last month I was obsessed with making Clafoutis. So obsessed I made two versions within one week.
As Wikipedia describes it, Clafoutis is “a baked French dessert of fruit, traditionally black cherries, arranged in a buttered dish and covered with a thick flan-like batter.”
The first one I made was with apricots, and it was deliciously tart, but much soggier than the cherry version. I attribute this to the fact that apricots hold more water than cherries.
