I will say this recipe was surprisingly dense and filled me up so much I actually didn’t finish my stack. You can add baking powder to make them fluffier, which I have yet to try, but you might want to.
INGREDIENTS
1 cup oat flour (you can blend rolled oats until they’re a fine powder)
1 ripe banana
2/3 cup plant-based milk (I used soy)
pinch cinnamon and/or cardamom powder
DIRECTIONS
- In a bowl, mash your banana into a fine consistency.
- Add oat flour, milk, and spices. Whisk until there are no lumps.
- Heat a skillet with some spray oil and plop those babies in, one ladle at a time. Serve with your choice of topping (I chose blackberries and honey). Enjoy!
