Are you ready to stop thinking about what to eat for breakfast? I’ve got a fantastic breakfast meal prep that’s filling, aesthetically pleasing, delicious, and most importantly, super easy to make with simple, wholesome ingredients.
Grab a few mason jars and your favorite fruit and let’s get started.
P.S. This recipe makes 5 mason jars worth.
INGREDIENTS:
2/3 cup chia seeds
1.5 cups plant milk (I used coconut)
2.5 tbsp sweetener (I used date syrup)
1 & 2/3 cup rolled oats
2/3 cup pecans
~ 15 pitted dates
cinnamon & cardamom to taste
fruit of choice (I used 3 mangoes)
DIRECTIONS:
- For the chia pudding, combine milk and chia seeds with sweetener in a bowl, let rest in the fridge for at least 30 minutes to an hour before ladling equal amounts into your mason jars.
- Chop up your pecans to small crumbles and add the rolled oats and pecans to a large skillet. Heat until they start to toast.
- In a blender, combine your oats, pecans, dates, and spices and pulse until well incorporated but not the point of a fine powder.
- Assemble as chia pudding, granola, and top off with your fruit of choice. Voila!
