Are you ready to stop thinking about what to eat for breakfast? I’ve got a fantastic breakfast meal prep that’s filling, aesthetically pleasing, delicious, and most importantly, super easy to make with simple, wholesome ingredients.

Grab a few mason jars and your favorite fruit and let’s get started.

P.S. This recipe makes 5 mason jars worth.

INGREDIENTS:

2/3 cup chia seeds
1.5 cups plant milk (I used coconut)
2.5 tbsp sweetener (I used date syrup)
1 & 2/3 cup rolled oats
2/3 cup pecans
~ 15 pitted dates
cinnamon & cardamom to taste
fruit of choice (I used 3 mangoes)

DIRECTIONS:

  1. For the chia pudding, combine milk and chia seeds with sweetener in a bowl, let rest in the fridge for at least 30 minutes to an hour before ladling equal amounts into your mason jars.
  2. Chop up your pecans to small crumbles and add the rolled oats and pecans to a large skillet. Heat until they start to toast.
  3. In a blender, combine your oats, pecans, dates, and spices and pulse until well incorporated but not the point of a fine powder.
  4. Assemble as chia pudding, granola, and top off with your fruit of choice. Voila!
