Homemade Pad See Ew

Every now and then I get quite ambitious and try to make a dish with some level of complexity that’s just convoluted enough that it makes me itch.

This past week I decided I would try my hand at Pad See Ew – my favorite noodle dish at Thai restaurants. Forget Pad Thai, Pad See Ew is infinitely tastier and actually quite easy to make.

I used Foods of Jane’s recipe, as well as her homemade 3-ingredient noodle recipe for the signature flat-wide noodles used in this dish, however, I will say that either store-bought rice noodles would be better, OR, if you have a pasta machine, use that to get your noodles nice and thin.

I didn’t particularly enjoy the texture of how thick my noodles came out, and honestly, that 3-ingredient recipe should be reserved for dire times cause it’s just not that great. I SAID WHAT I SAID.

My mom told me she really liked how this turned out overall, so I’ll take that compliment. Check out my altered and enhanced recipe below. Don’t forget you can spice this up with chili flakes!

INGREDIENTS

package wide rice noodles
oil
1 medium-large onion, sliced
~2 cups broccoli florets
3 eggs
3 cloves garlic, minced
For the sauce
2 tbsp oyster sauce
2.5 tbsp soy sauce
2 tbsp water
1/2 tbsp white vinegar
1/2 tbsp sugar

DIRECTIONS

  1. In a pot, bring salted water to a boil and cook your package noodles according to instructions. Drain and set aside.
  2. In a small bowl, combine your sauce ingredients and set aside.
  3. In a wok or large pot, heat a couple tablespoons of oil, then add onion and broccoli with salt and pepper, and cover to steam cook for about ~7 minutes. Make sure to check on them and push them around a bit.
  4. In a small bowl, whisk your eggs together. Push your greens to one side of your pot, then add your eggs and scramble them. Remove your eggs and greens from the pot (I just used my noodle boiling pot for less cleanup).
  5. Add your noodles and sauce too the pot that you just removed your greens and eggs from, and stir together for about ~2 minutes, until the sauce thickens up and caramelizes.
  6. Add your greens and eggs back in and stir. Add your minced garlic and stir. Enjoy!
