With summer approaching around the corner, this is one of my go-to low effort meals that’s vibrant, healthy, and doesn’t take a lot of time to put together. You can also opt for grilling instead of turning the oven on, which is always a plus in these hot Michigan days.

Here’s what you’ll need:
1 pack of garlic Naan bread
cherry tomatoes
cucumber
red onion, thinly sliced (& quick pickled for a lil extra zing)
feta cheese
salt & pepper
olive oil & vinegar
chicken kebobs
garlic sauce
Directions:
- Thinly slice red onion and quick pickle with cracker pepper, a little vinegar, and a couple pinches of salt to cut out the acidity.
- While the onion is pickling, dice tomatoes and cucumber and combine together with pickled onions, feta cheese, S&P and EVOO&vinegar.
- Toast the naan bread lightly – or grill if you’re grilling the chicken kebobs.
- Grill or oven bake the chicken kebobs.
- To assemble, slather naan with garlic sauce, then add chicken and top with the salad mix. Enjoy!
